Nic’s Chopped Salad

Ingredients:
3 tomatoes, deseeded and diced
1 red capsicum, diced
1 long red chile pepper, deseeded and finely chopped
2 lebanese cucumbers
2 spring onions
1 baby cos lettuce
80 g purple cabbages, shredded
2 tablespoons flat-leaf parsley
2 tablespoons chopped ground coriander
1 tablespoon fresh mint leaves
1 avocado, diced
30 g pumpkin seeds
45 g sunflower seeds
How to prepare
Place all salad ingredients in a bowl and toss with vinaigrette.
Allow to stand for 10 mins before serving
