Nic’s Chopped Salad

Ingredients:

  • 3 tomatoes, deseeded and diced

  • 1 red capsicum, diced

  • 1 long red chile pepper, deseeded and finely chopped

  • 2 lebanese cucumbers

  • 2 spring onions

  • 1 baby cos lettuce

  • 80 g purple cabbages, shredded

  • 2 tablespoons flat-leaf parsley

  • 2 tablespoons chopped ground coriander

  • 1 tablespoon fresh mint leaves

  • 1 avocado, diced

  • 30 g pumpkin seeds

  • 45 g sunflower seeds

How to prepare

  1. Place all salad ingredients in a bowl and toss with vinaigrette.

  2. Allow to stand for 10 mins before serving
