Fish Ceviche
A light fish dish packed with taste! I first tried a ceviche when I was in Fiji years ago and never looked back! Although it’s essentially raw, the fish is cooked in the acid of the citrus juices. Delicious and easy to make!
Pork Schnitzel with a difference
This pork schnitzel (which you could make into chicken or fish) is a classic with a twist. The spices combined in the gluten free batter is delicious. Given it’s gluten and dairy free it’s also a healthier alternative to this classic dish.
Orange Chicken with broccoli
I love no fuss sauces that make a dish taste super yummy!! This is one such recipe. A great mix of protein, fibre and vitamins. Packed with Vitamin C, this one is particularly good to keep your immune system in shape!
Lentil and Caramelised Onion Croquettes
This simple and delicious vegetarian meal might not look like much but looks are deceiving in this case. Even my children reach out of these croquettes! Great for lunch boxes too.

Vietnamese ‘Claypot’ Fish
A super tasty fish dish that pleases the whole family and the gut too. I personally love the sauce and enjoy watching the kids lick the sauce off their plates when they’ve finished. A good sign!
